First served in 1948 by Giuseppe Cipriani, the peach Bellini is a classic. Until we put our own spin on it of course!
- 4 peach slices and 3 raspberries muddled into a puree
- 30ml Western Star Gin
- 15ml simple syrup
- Squeeze of fresh lemon
- Shaken with Ice, double strained, topped with Prosecco and a splash of Chambord
